Ingredients (6 servings):
Coleslaw:
2 cups green cabbage, sliced thinly
2 cups red cabbage, sliced thinly
2 cups (4-5 large) carrots, grated
½ cup red onion, sliced thinly
½ cup parsley, chopped
Dressing:
¼ cup extra virgin olive oil
2 tbsp. lemon juice
2 tbsp. apple cider vinegar
1 clove garlic, minced
1 tsp. celery seed
1 tsp. salt
¼ tsp. black pepper
Equipment:
large mixing bowl
Instructions:
Coleslaw:
1. Add green cabbage, red cabbage, and carrot to mixing bowl.
2. Stir in onion, parsley, and celery seed.
3. Toss gently to distribute all items equally in bowl.
Dressing:
1. Add olive oil, lemon juice, vinegar, garlic, salt, and pepper in a mason jar.
2. Close lid and shake.
3. Drizzle the coleslaw with dressing and toss.
4. Taste for seasoning.
